Kick up your appetite with these spicy lettuce wraps.
Servings: 6 appetizer portions
Prep Time 5 minutes
Cook Time: 10 minutes
Ingredients:
• 2 lbs. flat iron steaks
• 2 Tbsp. olive oil
• 6 large leaves iceberg lettuce
• Southwestern Rub
• Kickin' Slaw
• Chipotle Mayonnaise
Instructions:
Drizzle steaks with olive oil.
Using the Southwestern Rub, cover the surface of the steaks, rubbing into surface.
Southwest Rub
Ingredients:
• 1-1/2 tsp. chili powder
• 1 tsp. garlic powder
• 1/2 tsp. dried oregano leaves, crushed
• 1/4 tsp. ground cumin
Instructions:
Combine all ingredients. Mix until well blended.
Place steaks on grid over medium ash-covered coals. Grill steaks 7-9 minutes for rare (140°F) to medium (160°F), turning once. Set aside.
To assemble place Kickin' Slaw mixture on a lettuce leaf, top with thinly sliced beef and 1 Tbsp. Chipotle Mayonnaise. Roll leaf around mixture. Serve hot.
Kickin’ Slaw
Ingredients:
• 1 cup Napa Cabbage, thinly chopped
• 1/2 cup carrots, julienned
• 1/4 cup red bell pepper, chopped
• 1/4 cup green onion, sliced
• 2 Tbsp. freshly squeezed lime juice
Instructions:
Combine all ingredients; refrigerate until ready to serve.
CHIPOTLE MAYONNAISE
Ingredients
• 2 cups mayonnaise
• 3 Chipotle peppers in Adobo sauce
• 1 Tbsp. lime juice
• 2 cloves garlic
• 1 large shallot
• salt and pepper, to taste
Instructions
In bowl of food processor, combine peppers, lime, garlic and shallot and process until smooth. Combine with mayonnaise and season with salt and pepper.
Refrigerate until ready to serve.
