Big Book of Chocolate

Preparation Time 20 minutes, plus chilling
Ingredients
• 7 oz. bittersweet chocolate, melted and left to cool
• 3 eggs, separated
• 1 tbsp. coffee liqueur
• 1/2 cup heavy cream, whipped to soft peaks
• 2 tbsp. chocolate drink mix, sifted
Directions
1. In a large bowl, mix the melted chocolate and egg yolks together using a metal spoon, then stir in the liqueur. In a clean bowl, whisk the egg whites until stiff, using an electric hand mixer, and stir into the chocolate mixture until they are well combined.
2. Using a large spoon, divide the mixture evenly between 4 dishes and refrigerate 1 hour. Just before serving, top each mousse with whipped cream and sprinkle the chocolate drink mix over.
