Yield: 6 servings.
INGREDIENTS
1½ pounds skinless and boneless chicken breasts
6 potatoes, cubed
1 (15 oz.) can sauerkraut, drained
1 cup apple juice
1 teaspoon ground ginger
1/2 teaspoon curry powder
1/4 cup brown sugar
DIRECTIONS
Brown chicken in small amount of margarine or oil in skillet.
Add kraut and potatoes.
Season with salt and pepper, if desired.
Mix apple juice with curry, ginger and brown sugar.
Pour over chicken.
Cover and simmer 45 minutes or until chicken and potatoes are tender.
Add additional apple juice as needed.
To microwave:
Place chicken on top of kraut and potatoes in 2½ quart oblong glass baking dish.
Mix apple juice, sugar and spices and pour over top.
Cover with waxed paper and cook on High (10) for 9-10 minutes.
Spoon juices over chicken and cook uncovered on Medium (6) for 6-7 minutes.
Let stand covered for 5 minutes before serving.
