This recipe is great if you’re craving something sweet and chocolaty but don’t have an oven for baking.
Recipe from: Look, Dude, I Can Cook!; Four Years of College Cooking Made Easy by Amy Madden
Ingredients
• 2 cups sugar
• 1/2 cup whole milk
• 4 tablespoons unsweetened cocoa powder
• 1/4 cup (1/2 stick) unsalted butter
• 3 cups rolled oats (quick cooking)
• ½ cup peanut butter (optional)
• 1 teaspoon vanilla extract
Directions
Line a cookie sheet with waxed paper and set aside.
In a large, heavy-bottomed saucepan, combine the sugar and cocoa and mix well, add the milk and butter and stir to combine.
Cook over high heat, stirring constantly until mixture comes to a boil. Allow to boil for 2 minutes then remove from heat and stir in the peanut butter, add the oats and vanilla and stir well to combine.
Drop by tablespoonfuls onto the prepared cookie sheet and chill.
