Serves 2.
INGREDIENTS
• 1 tomatoes, seeded and chopped
• 1/3 cup finely chopped red onion
• 2 tablespoons chopped fresh cilantro
• 1/2 teaspoon ground cumin
• 1/2 teaspoon grated lime zest
• 2 teaspoons fresh lime juice
• 3 tablespoons mayonnaise
• 8 ounces lump crab meat, drained and shells removed
• Salt and pepper to taste
• 1 large ripe avocado, cut into halves
• 1 teaspoon fresh lime juice
• Chopped fresh cilantro (optional)
• 1 lime, peeled and cut into wedges
DIRECTIONS
Combine the tomatoes, onion, 2 tablespoons cilantro, the cumin, lime zest and 2 teaspoons lime juice in a bowl and mix well. Stir in the mayonnaise. Fold in the crab meat and season with salt and pepper.
Brush the cut sides of the avocado halves with 1 teaspoon lime juice to prevent discoloration. Mound equal portions of the crab meat salad in each avocado half and arrange each stuffed avocado half on a serving plate. Garnish with chopped cilantro. Arrange the lime wedges around the stuffed avocado halves. Serve immediately.
