A colorful condiment that balances sweet mango with hot jalapeno.

Makes About 4 Cups
Ingredients
• 2 ripe mangoes, peeled, pitted and cut into 1/4-inch pieces
• 1/2 small red pepper, cut into 1/4-inch pieces (about 1/2 cup)
• 1/2 English (seedless) cucumber, unpeeled and cut into 1/4-inch pieces
• 1 jalapeno chile, seeded and minced
• 3 tablespoons fresh lime juice
• 1/4 teaspoon salt
• 1/8 teaspoon coarsely ground black pepper
Directions
In large bowl, place mangoes, red pepper, cucumber, jalapeno, lime juice, salt, and pepper; toss to combine. If not serving right away, cover and refrigerate up to 1 day.

Each 1/4 cup: About 25 calories, 0g protein, 7g carbohydrate, 0g total fat (0g saturated), 0mg cholesterol, 50mg sodium.
