The Hippy Gourmet's Quick & Simple Cookbook
Unlike granola, muesli requires no cooking, and we like anything that saves fuel. It's great when you're cooking for overnight guests but have no idea when everyone will be waking up. Made with soy yogurt, it's a good vegan breakfast.
Serves 4-5
Ingredients
• 1 cup rolled oats
• 1 cup orange or apple juice
• 1/4 cup chopped dried apricots
• 1/4 cup chopped almonds
• 1 apple, cored and chopped
• 1 ripe banana, sliced
• 2 cups favorite yogurt
• Honey, to taste (optional)
Directions
Mix the oats, juice, apricots, and almonds in a bowl. Cover and refrigerate overnight.
When you're ready to serve, stir in the apple. Serve with sliced banana and yogurt, drizzled with honey if you like.
