Old Farmer's Almanac Everyday Cookbook

Makes about 6 pint jars.
Ingredients
• 6 medium green tomatoes
• 2 large onions, peeled
• 1/2 head cabbage, cored
• 6 green peppers, seeded
• 1/4 cup salt
• 3 cups vinegar
• 3 cups sugar
• 1 tablespoon mustard seed
• 1 tablespoon celery seed
• 1 teaspoon turmeric
• 3 sweet red peppers, seeded and finely chopped
Directions
Put the tomatoes, onions, cabbage, and green peppers through the coarse blade of a food processor. Transfer the cut vegetables to a large bowl, mix with the salt, and let stand overnight.
In the morning, rinse and drain well. In a large pot, combine the vinegar, sugar, 1 cup of water, and spices and boil for 5 minutes. Add the vegetable mixture and the red peppers and simmer for 10 minutes. Remove from the heat.
Fill sterilized jars, seal, and then process in a boiling-water bath for 10 minutes; start counting the processing time when the water starts to boil.
