Fix-it And Enjoy-it Cookbook

Makes 12 servings
Prep Time: 10 minutes
Baking Time: 40 minutes
Ingredients
• 1 stick (1/2 cup) butter or margarine, at room temperature
• 2 cups brown sugar, divided
• 1 egg
• 1 tsp. vanilla
• 1 cup milk
• 2 cups flour
• 1 tsp. baking soda
• pinch of salt
• 1 cup milk
• 2 cups chopped rhubarb
• 1/2 tsp. cinnamon
Directions
1. With an electric mixer, cream together butter and 1 1/2 cups brown sugar. Add egg and vanilla and mix thoroughly.
2. In a separate mixing bowl, stir together flour, baking soda, and salt.
3. Add dry ingredients to creamed ingredients alternately with milk.
4. When well blended, mix in rhubarb by hand. Pour batter into greased 9 x 13 glass baking pan.
5. Sprinkle with 1/2 cup reserved brown sugar and cinnamon.
6. Bake at 350° for 40 minutes.
