SALMON RICE SAVORIES

Yield: Makes 35 to 40 balls
 

INGREDIENTS

• 1½ cups cooked rice
• 1  7¾ ounce can salmon, drained and flaked
• 1/2 cup 2 ounces shredded Cheddar cheese
• 1/4 cup finely chopped green onions
• 1/4 cup finely chopped dill pickle
• 1/4 cup finely chopped ripe olives
• 1/4 teaspoon salt
• 1/4 cup mayonnaise
• 1 egg, beaten
• 1 teaspoon lemon juice
• 3 to 4 drops hot pepper sauce
• paprika
 

DIRECTIONS

Combine rice, salmon, cheese, onions, pickle, olives, salt, mayonnaise, egg, lemon juice and pepper sauce in large bowl; form mixture into 1-inch balls.

Place on greased foil-lined baking sheet(s) and dust with paprika.

Bake at 375 degrees 20 minutes, or until lightly browned.

Serve with cocktail sauce or tartar sauce.
