SEVEN LAYER DINNER WITH RICE

Fix-it And Enjoy-it Cookbook

Makes 6 servings
Prep Time: 20-30 minutes
Baking Time: 1½ hours


Ingredients

• 1 cup uncooked minute rice
• 1 cup canned whole-kernel corn, drained
• salt and pepper to taste
• 2 8-oz. cans tomato sauce, divided
• 3/4 cup water, divided
• 1/2 cup chopped onions
• 1/2 cup chopped green pepper
• 3/4 lb. uncooked ground beef
• 4 strips bacon, cut in half
 

Directions

1. Place rice in the bottom of a greased 2-qt. casserole dish.

2. Cover with drained corn. Sprinkle with salt and pepper.

3. In a small mixing bowl, blend 1 can tomato sauce and 1/2 cup water. Pour over corn.

4. Top with onions and green peppers.

5. Crumble uncooked ground beef over top. Sprinkle with salt and pepper.

6. Mix second can of tomato sauce with 1/4 cup water and pour over meat.

7. Top with bacon slices.

8. Cover and bake at 350° for 1 hour. Uncover and bake 1/2 hour longer, until bacon is crisp.
