Makes: 12 servings
2 cups mashed ripe BANANAS
1/2 cup chopped banana peppers
4 cups creamed corn
2 cups blue cornmeal
1-1/2 cups milk
2/3 cup oil
2 eggs
1 teaspoon salt
1 teaspoon baking soda
Preheat oven 350 degrees F.
Combine bananas and banana peppers; set aside.
Combine all the other ingredients in large mixing bowl.
Spread one half of the batter into an 13x9 pan coated with cooking spray.
Add bananas and banana pepper mixture.
Cover with remaining batter.
Bake 45 minutes or until golden brown in color.
Serve warm with honey.
