This cookbook is truly wonderful! I consider myself a good cook and have made many tasty roast chickens, but after making the "Sea Salt Roast Chicken with Delectably Crispy Skin" for dinner last night I feel like I'd stumbled upon a whole new world for chicken. The chicken was moist, delicious, and true to it's name - had wonderfully crispy skin that my husband gobbled up.
     Aside from the great recipes and gorgeous pictures I love the tips that appear on many of the recipes in the small boxes, they are little kitchen gems. One of my favorites is the note about finishing oils, there is so much information out there that it can really be confusing, Mindy helps take the mystery away. I've already bought 4 copies of this book as gifts, I think it's a great addition to the seasoned chefs' kitchen or someone just starting out. I can hardly wait to use the leftovers for "Whole-Wheat Spaghetti with Roast Chicken, Shredded Brussels Sprouts, and Parmesan"!
