Makes 2 servings.
Ingredients:
1 cup liquid egg substitute, thawed if frozen
1 teaspoon honey
1/2 cup grated unpeeled apples
1 tablespoon butter
1/4 cup cubed low-fat cheddar cheese
Directions:
Lightly beat egg substitute with honey in a small bowl.
Stir in the grated apples.
Heat butter in a skillet; when butter foams, add the egg mixture and cheese cubes.
Stir a few times until eggs are cooked, about 3 minutes.
Approximate Nutritional Analysis (per serving):
calories, 212; protein, 19 g; carbohydrates, 9 g; dietary fiber, 1 g; fat, 11 g; cholesterol, 22 mg; sodium, 382 mg; 47% calories from fat.
