1 cup long grain enriched rice
1/4 cup minced onion
2 teaspoons butter
2 cups chicken broth
1/4 teaspoon seasoned salt
1 10-ounce package frozen green peas
1/4 cup lightly salted roasted cashews
Fresh cilantro springs (optional)
Cooking Directions
In a large skillet with a lid, saute rice and onion in the butter until onion is almost translucent.
Add chicken broth and seasoned salt, bring to a boil, cover and simmer until rice is tender, about 12-15 minutes.
Remove from heat.
Stir in frozen peas and cashews, re-cover and let stand 10 minutes.
Garnish with fresh cilantro sprigs, if desired.
Serving Suggestions
Liven up simple rice by creating your own rice pilaf.
Serve with grilled pork tenderloin mediallions.
