Fix-it And Enjoy-it Cookbook

Makes 4-6 servings

Cooking Time: 10 minutes
Chilling Time: 2-3 hours
Ingredients
• 1 pkg. extra-firm tofu, cubed
• 1 carrot, grated
• 1 scallion, sliced
• 1 clove garlic, minced
• 1/3-1/2 cup sunflower seeds
• 1 Tbsp. soy sauce
• 2 Tbsp. lemon juice and rind
• 2 Tbsp. olive oil
• 1/4 tsp. salt
• 1/8 tsp. pepper
Directions
1. In a saucepan, steam tofu in 1" of water for 10 minutes.
2. Drain, and cool. Crumble with fork.
3. Place crumbled tofu, carrot, scallion, garlic, and seeds in a large mixing bowl. Combine gently.
4. In a jar with a tight-fitting lid, combine all remaining ingredients.
5. Pour dressing over the tofu/veggies mixture. Combine well.
6. Cover and chill for 1-2 hours.
