PEAS

Peas in the pod should be stored at 35 degrees F. and will keep for several weeks. Keep in cracked ice for best flavor.

One pound of pea pods will yield about 5 ounces of shelled peas.

Fresh peas lose almost 40% of their sugar content after 6 hours of room temperature storage. The sugar is converted to starch.

Season cooked peas with fresh or dried mint, chopped fresh parsley, curry powder, or with lemon.

Add shelled green peas, snow and sugar snap peas to tossed green or pasta salads or to stir-fried dishes.

Snow and sugar snap peas can be eaten raw as a snack or with your favorite low-fat dip.
