Yield: 6 individual 5-inch pizzas
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Ingredients:
• 1 lb. Wisconsin Red potatoes, cut into chunks
• ½ cup reduced fat or reduced calorie Ranch dressing
• 1 lb. pizza dough, thawed if frozen
• 1½ cups shredded mozzarella
• ¾ cup chopped cooked chicken
• 1/3 cup bacon bits
• 1/3 cup minced red onion
• 3 Tbsp. shredded Cheddar
Procedure:
1) Place potatoes in pot of water; boil for about 15 minutes or until tender when pierced with fork. Drain well in colander.
2) In large bowl, mash potatoes until smooth; stir in Ranch dressing.
3) Preheat oven to 425°F.; line 2 large baking sheets with parchment paper.
4) On lightly floured board, divide pizza dough into 6 equal pieces; roll each into a ball.
5) Press each into 5-inch circle; place on parchment paper-lined baking sheets.
6) Spread each dough circle with equal amount mashed potato mixture.
7) Sprinkle with equal amounts of cheeses, chicken, bacon bits, and onion.
8) Bake about 15 minutes or until dough is lightly browned.
