The 5-A-Day Menu Planner

Serves 4
Ingredients
• 2 garlic cloves, crushed
• juice of 1 lime
• 1 tbsp. olive oil
• 4 skinless, boneless chicken breasts
• salt and freshly ground black pepper
• 4x1 cup salad greens, to serve
FOR THE SALSA
• 2 mangoes, pitted and diced
• 2 cups seeded and chopped cucumber
• 1 red chili, seeded and finely chopped
• 6 scallions, thinly sliced
• 1/2 tsp. chopped mint leaves
• juice of 1/2-1 lime
Directions
Combine the garlic, lime juice, and oil and season with salt and pepper. Pour the marinade over the chicken and turn to coat well. Cover and let marinate in the refrigerator at least 1 hour.
Heat the broiler, then broil the chicken 5 to 6 minutes on each side until cooked through.
Meanwhile, to make the salsa, combine the mango, cucumber, chili, scallions, and mint leaves.
Season with a pinch of salt squeeze over lime juice to taste, and toss well.
Serve the chicken with the salsa and side salads.
