Makes 4 to 6 servings.
This is an official 5 A Day recipe
8 to 10 small red potatoes
Olive oil
1/4 cup flour
2 Tbsp. parmesan cheese
1 Tbsp. parsley flakes
2 tsp. rosemary
1 tsp. basil
Peel potatoes, cut into quarters.
Brush with olive oil.
Place remaining ingredients in plastic bag and mix.
Add potatoes to bag and shake to coat.
Arrange in baking pan, turning once.
Remove from oven and sprinkle with a little more Parmesan cheese.
Bake at 375 degrees for 1 hour.
Nutritional Analysis Per Serving: Calories, 231; Fat, 3g; Cholesterol, 2mg; Fiber, 4g; Sodium, 61mg; percent calories from fat, 11%.
