Makes 4 servings.
2 bricks frozen hash browns
2 Tbsp. Thousand Island dressing
6 ounces sliced corned beef
1 cup sauerkraut, well drained
1 cup shredded Swiss cheese
Pan fry hash browns according to package instructions.
Cut in half when bricks are turned to brown on second side.
Place cooked hash browns on baking sheet and spread with dressing.
Top with sauerkraut, corned beef and cheese.
Broil until cheese melts and lightly browns, approximately 2 to 3 minutes.
Serve immediately.
Variation: To make grilled reuben sandwiches, butter four pieces of bread on one side. On the other side, spread dressing. On two pieces, place corned beef, sauerkraut and cheese, then top with other two pieces of bread. Grill in frying pan on both sides until cheese is melted and bread is light brown.
