May 31, 2015 The Farmers Dinner & Blu Aqua Present: "Cochon de lait" Amherst, New Hampshire Cochon de lait is the art of cooking a pig before an open hardwood fire. Although the term cochon de lait is French, the origin of this Louisiana social event is obscure. Local legend, however, tells that veterans of Napoleon’s army brought the traditional preparation of cochon de lait to Louisiana in the early 1800s. Many of these soldiers settled in a town in Avoylles Parish they named Manusra in honor of the site of their last major campaign. Since then, Mansura, LA has been designated by the Louisiana legislature as “La Capital du Cochon de Lait.” Join the Farmers Dinner and award winning Chef Chris Nobel for an event like none other. This five course meal features chef’s signature Louisiana style cuisine sourced from the highest quality local farm fresh ingredients. This event is like no other with chef using hardwood smoking methods along with the entire animal from nose to tail. During each course we have local farmers share stories with the dine rs. Diners will leave with a recipe from chef Nobel himself so that they can create a dish they are having that night for others at home. The chef’s classically-trained French background will introduce your taste buds to new sensations with a variety of sauces and his take on traditional offerings. Tickets are $79.00.
