A great midafternoon pickup, this drink tastes like sweet potato pie a la mode. When baking sweet potatoes, I usually make an extra one so I can enjoy this smoothie the next day.
Makes 1 serving
Ingredients
• 1/2 cup reduced-fat (2%) milk
• 1/2 cup baked sweet potato, about 1 medium
• 1/4 cup reduced-fat vanilla frozen yogurt
• 1 tablespoon maple syrup
• 1/4 teaspoon pumpkin pie spice
Directions
In a blender, combine the milk, sweet potato, frozen yogurt, maple syrup, and spice. Blend until smooth and foamy.
Serve immediately.
Another Way:
If pumpkin pie spice is not available, use 1/8 teaspoon ground cinnamon plus pinches of ground allspice, ginger, and nutmeg.

Per serving: 355 calories, 5 g fat, 3 g saturated fat, 11 g protein, 67 g carbohydrates, 4 g fiber
