Description: Jerk Chicken Marinade

INGREDIENTS
• 2 Tablespoons Ground Allspice
• 2 Tablespoons Thyme
• 1 Tablespoon Black Pepper
• 1 Teaspoon Ground Ginger
• 1 TeaspoonC ayenne Pepper
• 1½ Teaspoons Nutmeg
• 1½ Teaspoons Cinnamon
• 2½ Tablespoons Granulated Garlic
• 2 Tablespoons Salt
• 2 Tablespoons Granulated Sugar
• 1 Tablespoon Garlic Cloves -- minced
• 1 Cup Yellow Onion -- diced fine
• 1/2 Cup Scallion -- diced fine
• 1 Each Scotch Bonnet Chili -- minced fine
• 1/4 Cup Olive Oil
• 1/4 Cup Canola Oil
• 1¾ Cups White Vinegar
• 1 Cup Orange Juice -- fresh
• 1/2 Cup Lime Juice -- fresh
DIRECTIONS
Combine all ingredients and mix thoroughly.
Marinate chicken overnight, reserving some of the marinade for basting.
Grill slowly over a smokey hardwood fire. Baste chicken as it cooks with some of the marinade.
