Cherries and mixed berries make a great addition to a traditional Waldorf salad
Makes 6 (1/2-cup) servings.
Ingredients:
• 3/4 cup mixed dried berries and cherries (red tart cherries, cranberries, blueberries and strawberries)
• 2 ½ cups cored and cubed Red Delicious or Gala apples
• 2 teaspoons fresh lemon juice
• 1/2 cup chopped celery
• 1/3 cup chopped toasted walnuts*
• 2/3 cup light mayonnaise
• 1 teaspoon sugar
• 1/2 teaspoon ground ginger
Directions:
Place mixed berries and cherries in a small bowl. Pour in enough boiling water to cover the fruit. Let stand for 5 minutes. Drain well. If necessary, cut large strawberries into smaller pieces.
Meanwhile, place apples in large bowl. Sprinkle with lemon juice; toss until coated.
Add celery, walnuts and drained fruit. Stir together mayonnaise, sugar and ginger.
Add mayonnaise mixture to apple mixture; toss until apple mixture is evenly coated.
Cover and chill about 30 minutes before serving.
*To toast nuts: Preheat oven to 350 degrees Fahrenheit. Spread walnuts in a single layer in a baking pan. Bake about 8 minutes or until lightly toasted. Cool walnuts before chopping.
